Hey guys! So today is another recipe post which I’ll be using some fresh produce from Eating Well Ottawa. If your a local Ottawa resident, you should definitely check out this company. They shipped a box of goodies to my house including some fresh vegetables and fruits so I made a delicious kale salad using what they sent me!
This Lemon Almond Kale Salad is what I ate for dinner with a side of chicken. Amazing dish to make for lunch or dinner. Below are the steps I toke in creating this tasty bowl of salad. Continue on reading if you want to learn how to make this!!
1 Handful of Almonds
1 Cup Olive Oil
4 Cloves of Garlic
1 tsp Salt
10-12 ounces of Kale
Put your handful of almonds into your toaster oven to toast until golden brown. Set aside to cool once finished.
Squeeze the lemon juice from your lemons out into a bowl. Add your 1 Tsp of salt into your mixture and slowly whisk then add in your olive oil.
Using the flat side of your knife, crush the four cloves of garlic so that it splits open but not exactly crushed (still intact in one piece). Throw those into your mixture and put your finished dressing into the refrigerator to cool while you work on your kale next.
Once your Kale is washed and dried, cut them up into pieces.
Note: personally I’m not too concerned about the exact proportions of each leaf size but if you wanted, you can cut them up into 1/4 inch pieces which is similar to thin ribbon pieces.
Grab your cut up Kale and put that into a salad bowl. Pour your cooled dressing over the kale salad. Chop up your roasted almonds and top that and your parmesan over your finished salad.
